Ingredients:
● 2 whole wheat English muffins, cut in half
● 1 tsp (5 mL) butter
● 2 tbsp (30 mL) red onion, diced
● 2 tbsp (30 mL) bell pepper, diced
● 2 eggs, whisked
● ¼ cup (60 mL) pizza sauce
● 4 deli slices of ham
● ¼ cup (60 mL) cheddar cheese, grated

Instructions:

  1. Preheat oven to 375°F (190°C). Place the English muffin halves on a baking sheet.
  2. Heat butter in a small non-stick skillet over medium heat. Add the diced onion and bell
    pepper, and sauté for 2–3 minutes, until softened.
  3. Pour the eggs into the onion and pepper and scramble until just set. Remove from heat.
  4. Assemble the Pizza English Muffin:
    ○ Spread 1 tbsp of pizza sauce on each English muffin half.
    ○ Layer the sliced ham on top of the sauce.
    ○ Spoon the scrambled egg mixture evenly over the ham.
    ○ Sprinkle 1 tbsp cheese on top of each
  5. Place the assembled English muffins in the oven and bake for about 6-8 minutes, or until
    the cheese is melted and bubbly.
  6. Remove from oven and let cool slightly before serving.
