Ingredients:
- 2 tbsp (30 mL) butter
- 1 egg
- Pinch of salt and pepper
- 2 bagels, sliced in half
- 2 tbsp (30 mL) water
- 2 pieces, sliced cheddar cheese
Instructions:
- Preheat a medium-sized skillet over medium heat with butter, swirl to coat the pan.
- In a small bowl, whisk the egg with a pinch of salt and pepper.
- Once butter is hot and melted, place two bagel halves cut side down in the pan, pressing lightly to flatten the surface against the pan for 30-45 seconds.
- Pour the whisked egg into the center hole of each bagel half.
- Add the water around the outer edges of the pan to create steam, then cover with a lid and cook for about 2 minutes, or until the egg begins to set.
- Flip the bagel halves over. Add cheese, then top with the remaining bagel halves to create a sandwich.
- Place a sandwich press or a heavy bottomed pan on top of the bagel halves to apply some weight and cook until golden brown, about 1-2 minutes per side.
- Remove from the pan, let cool slightly, and enjoy!
