Ingredients:
- 2 cups (500 mL) oat beverage
- 1 tsp (5 mL) vanilla extract
- ⅓ cup (80 mL) maple syrup
- 2 tbsp (30 mL) water
- 3 tbsp (45 mL) cornstarch
- 2 eggs
- ⅛ tsp (0.5 mL) cinnamon
- 1 ½ cup (375 mL) berries of choice
Instructions:
- In a medium saucepan over medium heat, combine milk, vanilla extract, and maple syrup. Heat until the mixture begins to simmer, stirring occasionally to prevent scorching.
- In a small bowl, mix together the cornstarch and water until smooth, then mix in the egg and cinnamon.
- Once milk is simmering, reduce to low heat. Slowly pour the egg mixture into the milk, whisking constantly.
- Continue whisking for about 3 minutes, until it thickens enough to coat the back of a wooden spoon.
- Remove the saucepan from the heat and transfer pudding to a bowl. Cover the surface with plastic wrap, pressing it directly onto the pudding to prevent skin from forming. Allow it to cool.
- Assemble the cups:
○ In each of 6 cups, pour ¼ cup of the cooled pudding.
○ Add a layer of berries, about 2 tbsp.
○ Repeat with another ¼ cup of pudding and another layer of berries.
