Ingredients:

  • 2 cups (500 mL) oat beverage
  • 1 tsp (5 mL) vanilla extract
  • ⅓ cup (80 mL) maple syrup
  • 2 tbsp (30 mL) water
  • 3 tbsp (45 mL) cornstarch
  • 2 eggs
  • ⅛ tsp (0.5 mL) cinnamon
  • 1 ½ cup (375 mL) berries of choice

Instructions:

  1. In a medium saucepan over medium heat, combine milk, vanilla extract, and maple syrup. Heat until the mixture begins to simmer, stirring occasionally to prevent scorching.
  2. In a small bowl, mix together the cornstarch and water until smooth, then mix in the egg and cinnamon.
  3. Once milk is simmering, reduce to low heat. Slowly pour the egg mixture into the milk, whisking constantly.
  4. Continue whisking for about 3 minutes, until it thickens enough to coat the back of a wooden spoon.
  5. Remove the saucepan from the heat and transfer pudding to a bowl. Cover the surface with plastic wrap, pressing it directly onto the pudding to prevent skin from forming. Allow it to cool.
  6. Assemble the cups:
    ○ In each of 6 cups, pour ¼ cup of the cooled pudding.
    ○ Add a layer of berries, about 2 tbsp.
    ○ Repeat with another ¼ cup of pudding and another layer of berries.
