For our sales and marketing director Lori, nothing says Christmas like these snowball cookies. They're incredibly easy but so tasty that it's elbows out when they're served.
Snowball cookies have been a Christmas tradition for as long as I can remember. They were my favourite Christmas cookie growing up, and they’re still my favourite today. Whenever a plate of cookies appeared during the holiday season, my dad and I would immediately go for the snowballs—and they never lasted long! While my mom and sister had their own favourites, my dad and I always found ourselves competing for the last snowball on the plate. Now, I carry on the tradition by making them every year for my own family. Fittingly, my son has claimed them as his favourite cookie too, so the competition lives on! —Lori Dickson, director of sales and marketing
Ingredients for Snowball Cookies
1 cup butter
1/4 cup honey
2 cups flour
1/2 teaspoon salt
2 teaspoons vanilla
2 cups chopped pecans
Instructions for Snowball Cookies
- Preheat oven to 300°F.
- In a large bowl, cream together butter and honey.
- Once combined, add flour, salt vanilla and pecans. Mix to incorporate.
- Roll mixture into balls and place them on a parchment-lined cookie sheet.
- Bake for 20-25 min, or until the bottoms are lightly golden.
- Remove from oven and while they are still warm, roll in icing sugar and transfer to a rack to cool. Once completely cool, dust the tops with additional icing sugar for that fresh snow effect!
