The simplest recipes are sometimes the best and these salted peanut freezer bombs fit the bill. It's the best kind of surprise when you bite into that chocolatey coating to find a perfectly salty, nougaty filling. As a bonus, the almond flour base adds protein and fiber to give this snack a little staying power. Make them now. It will be the best 15 minutes you’ve spent in a long time.

Ingredients

3 tbsp almond flour
2 tbsp creamy peanut butter
2 tbsp salted raw or roasted peanuts
2 tsp maple syrup
¾ cup dark or milk chocolate chips
1 tbsp + 1 tsp virgin coconut oil

Directions

  1. Make the filling: In a small bowl, stir together the flour, peanut butter, peanuts and maple syrup until well combined.
  1. In a small saucepan, melt the chocolate chips and coconut oil over medium heat, stirring frequently to make sure the mixture doesn’t burn. (Or place the chocolate chips and coconut oil in a microwave-safe bowl and microwave on high in 20-second increments until completely melted and smooth.)
  2. Make the chocolate shell: Divide half of the melted chocolate evenly between the ice cube tray. Roll the filling by heaping teaspoons into oval balls and add one ball to each slot. Pour the remaining chocolate over the balls, dividing evenly. Freeze until the chocolate is completely hard, 30 to 45 minutes.

Storage Tip: Remove the freezer bombs from the ice cube trays and store in an airtight container or sealable freezer bag in the freezer for up to 3 months. Enjoy frozen or thaw at room temperature for 5 to 10 minutes.
