These little egg bites are a lifesaver on busy mornings and are so satisfying! They also make for great snacks on the go. They’re a PFF combo—protein, fat and fiber—to power you through the morning. The cottage cheese ups the protein factor and makes for the creamiest, fluffiest consistency. The combination of Gruyère and roasted red pepper is delicious, but you can make them your own by switching up the cheese and vegetables like chopped kale, mushrooms or broccoli. Or dice up some ham or bacon for an extra bit of salty goodness.

Ingredients

8 eggs
1 cup cottage cheese
1 cup shredded Gruyère or aged Cheddar cheese
¾ cup drained and chopped roasted red peppers, patted dry

Directions

  1. Preheat the oven to 350°F (180°C). Line a muffin tin with parchment paper baking cups or spray with cooking spray.
  1. In a blender, blend the eggs and cottage cheese on high for 30 seconds.
  2. Evenly divide ¾ cup of the Gruyère and the roasted red peppers between the cups of the muffin tin. Pour in the egg mixture until each cup is two-thirds full, and stir with a spoon to combine. Top with the remaining Gruyère.
  3. Bake for 25 to 30 minutes, until the tops are set and the egg bites are cooked through. Let cool for 5 to 10 minutes before removing from the muffin tin
