Loaded with thinly sliced steak, caramelized onions and plenty of melty provolone, these Philly cheesesteak sandwiches make a seriously satisfying dinner.

There’s a lot to love about a hot sandwich for dinner, especially when it comes together this quickly. Garlicky toasted rolls are piled high with tender ribeye, sweet caramelized onions and gooey provolone for an easy meal that requires little more than a skillet and a tableful of hungry family members.

Ingredients for Philly Cheesesteak Sandwiches

1 lb ribeye steak, trimmed and thinly sliced
1/2 tsp salt, or to taste
1/2 tsp black pepper, or to taste
1 large sweet onion, diced
2 tbsp vegetable or canola oil, divided
8 slices mild provolone cheese
4 hoagie rolls, sliced three-quarters of the way through
2 tbsp unsalted butter, softened
1 garlic clove, pressed
2–4 tbsp mayonnaise, or to taste

Instructions for Philly Cheesesteak Sandwiches

  1. In small bowl, stir together butter and garlic. Spread garlic butter over cut sides of hoagie rolls. Set large skillet or griddle over medium and toast rolls, cut-sides down, until golden. Set aside.
  2. Add 1 tbsp oil to skillet. Add onion, season lightly with salt and cook until softened and caramelized. Transfer to bowl and set aside.
  3. Increase heat to high and add remaining 1 tbsp oil. Arrange thinly sliced steak in an even layer and cook, undisturbed, for about 2 min, or until browned. Flip steak and season with salt and pepper. Continue cooking until steak is cooked through, then stir in caramelized onion.
  4. Divide steak and onion mixture into 4 portions in skillet. Top each portion with 2 slices provolone. Turn off heat and let stand until cheese is melted.
  5. Spread mayonnaise over toasted sides of rolls. Working one at a time, place roll over a portion of cheesy steak and use a spatula to scoop filling into roll. Serve warm.

Tip: For easier slicing, place steak in freezer for 20–30 min before slicing. The firmer meat is much easier to cut into the very thin slices you want for a cheesesteak.
