These ham and cheese muffins (or bacon and cheese, if that's how you roll) are also great for on-the-go breakfasts or an energy-boosting snack between extracurricular activities (or meetings for you!). Plus, they couldn't be easier.

Ingredients for Ham and Cheese Muffins

2 cups all-purpose flour
2 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 1/2 cups grated old cheddar cheese
1/2 cup chopped ham or crumbled bacon
1 cup plain yogurt
2 large eggs
1/4 cup canola or other mild vegetable oil

chives, for garnishing (optional)

Directions for Ham and Cheese Muffins

  1. Preheat the oven to 375°F.
  2. In a large bowl, combine flour, sugar, baking powder and salt. Add the grated cheddar and ham and toss to combine.
  3. In a medium bowl, whisk together the yogurt, eggs and oil. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Fill paper-lined muffin cups and sprinkle with chives, if using. Bake for 20-25 min, until golden and springy to the touch. Tip the muffins in their tins to help steam escape as they cool.

Makes 1 dozen muffins.
