These make-ahead freezer breakfast sandwiches are loaded with fluffy eggs, ham and melty cheese for an easy grab-and-go breakfast on busy mornings.

Getting everyone fed on a hectic morning is a whole lot easier when breakfast is already waiting in the freezer. Make a batch of these hearty breakfast sandwiches ahead of time, then reheat as needed for school mornings, early starts or even camping trips.

Ingredients for Freezer Breakfast Sandwiches

8 large eggs
1/4 cup milk
1 tbsp sour cream or plain Greek yogurt
1/2 tsp salt, or to taste
1/4 tsp black pepper
1/2 cup shredded mozzarella or other cheese
6 English muffins, split
2 tbsp unsalted butter, plus more for greasing pan
6 slices Monterey Jack or other cheese
12 slices Black Forest ham or other deli meat

Instructions for Freezer Breakfast Sandwiches

  1. Preheat oven to 350°F. Butter 9-by-13 in. baking dish.
  2. In large bowl, whisk together eggs, milk, sour cream, salt and pepper until well combined. Stir in mozzarella. Pour egg mixture into prepared baking dish and bake for 18–20 min, until eggs are set and no longer wet on top. Let cool in pan for 10–15 min, then cut into 6 equal pieces.
  3. Set oven to broil. Arrange English muffins, cut-side up, on rimmed baking sheet and spread with butter. Broil for 2–4 min, until golden and lightly crisp. Let cool slightly.
  4. To assemble, layer bottom half of each English muffin with egg, 1 slice cheese and 2 slices ham. Top with remaining English muffin halves.
  5. Wrap each sandwich tightly in plastic wrap, then place in large freezer-safe resealable bag. Refrigerate for up to 1 week or freeze for up to 2 months.

To reheat:

From frozen: Remove plastic wrap and place sandwich on paper towel-lined plate. Microwave on high for about 3 min, turning halfway through, until heated through.

From thawed: Thaw sandwich overnight in refrigerator. Remove plastic wrap, place on paper towel-lined plate and microwave for about 1 min, or until heated through.

For camping: Thaw sandwich and wrap tightly in heavy-duty aluminum foil. Heat on grill or over campfire for 3–5 min, or until heated through.
