Waffles? Amazing! Fluffy rainbow waffles? FANTASTIC. This recipe is great for brunch, lunch, March break, summer holidays, a craft, or just as a treat. Using a squeeze bottle can help you optimize your technique. But a spoon also does the trick.
Ingredients for Fluffy Rainbow Waffles
2 cups (240 g) all-purpose flour
¼ cup (50 g) sugar
1 tablespoon baking powder
½ teaspoon kosher salt
2 eggs, yolks and whites separated
1 ¾ cups (420 ml) milk
8 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract
Red, orange, yellow, green, blue and purple food coloring
Whipped cream and sprinkles, for serving, optional
Waffle iron
Squeeze bottle, optional
Directions for Fluffy Rainbow Waffles
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a medium bowl, whisk together the egg yolks, milk, butter, vanilla, and 3 tablespoons of water.
- Add the wet ingredients to the dry ingredients and mix until smooth.
- Whisk the egg whites until stiff peaks form. Gently fold in the egg whites.
- Divide the batter among six small bowls and add a few drops of each food coloring to each, creating a rainbow palette. Mix well until the colors are incorporated into the batter. Add to different squeeze bottles, if using.
- Starting with the purple batter, spoon or squeeze the batter into the center of a waffle iron. Spoon a circle of blue batter outside the purple. Continue to spoon circles of batter around the existing batter with the green, yellow, orange, and red batters.
- Turn your waffle iron to low to medium heat. Cook the waffle until golden brown, 2 to 3 minutes, or until the red light goes off on the waffle iron.
- Serve with whipped cream and sprinkles, if desired.
TIP: You can skip the coloring to make regular fluffy waffles. You can also freeze the leftovers and save to eat later! Just reheat in the toaster or air fryer.
