Whether you're pregnant, opting for non-alcoholic drinks or simply love a margarita, you're going to want to save this refreshing, spicy cucumber margarita mocktail recipe! Hey, the kids might even be into it!

Ingredients for Cucumber Margarita Mocktail

1 large cucumber, peeled and chopped
¼ cup fresh lime juice
2 tablespoons honey or agave syrup
¼ cup fresh mint leaves, plus extra garnish

For serving
Lime wedges
Tajín seasoning or salt, optional to top each glass
Sparkling water or soda water
Fresh mint leaves

Directions for Cucumber Margarita Mocktail

  1. In a blender, combine the cucumber, lime juice, honey, and mint leaves.
  2. Blend until smooth and well combined.
  3. Strain the mixture through a fine-mesh sieve or cheesecloth to remove any pulp. You should have about 1 cup of cucumber juice.
  4. Serve your mocktail. If desired, rim the edges of serving glasses with salt. To do this, rub a lime wedge around the rim of each glass, then dip the rim into a shallow dish of salt.
  5. Fill the glasses with ice cubes. Divide the cucumber juice evenly among the prepared glasses.
  6. Top each glass with sparkling water or soda water, stirring gently to combine
  7. Garnish each glass with a sprig of fresh mint and a lime wedge.
