While most apples are harvested in the fall, the Red Prince is a winter apple that reaches its peak after Christmas, and is only available until July each year. They're grown in Canada, overlooking the shores of Georgian Bay in Thornbury, Ontario. Recognized for its antioxidant-rich red skin, Red Prince apples are not only delicious eaten out of hand, but are great in salads (like this simple slaw), baked goods and pair particularly well with sharp cheddars and blue cheeses.
Asian Red Prince Apple Coleslaw

Ingredients:
1 napa cabbage, thinly sliced
2 carrots, grated
1 bunch green onions, chopped
2 Red Prince apples, thinly sliced or diced
2 Tbsp (30 mL) rice vinegar
2 Tbsp (30 mL) Dijon mustard
1 tsp (5 mL) finely crushed garlic
1/3 cup (75 mL) olive oil
1/4 cup (50 mL) sesame seeds
Place the cabbage, carrots, green onion and apple in a large, shallow bowl. In a small bowl, whisk together the rice vinegar, Dijon mustard and garlic. Slowly whisk in the olive oil until all are combined.
Drizzle over the veggies and toss to coat. Sprinkle with sesame seeds and serve immediately. Serves 6.
