Your new favourite breakfast hash is here! The flavours of sweet potato, chicken sausage, apple, onions and cinnamon work so well together. Skipping this apple, sweet potato and sausage breakfast skillet recipe almost seems criminal.
Ingredients For Apple, Sweet Potato And Sausage Breakfast Skillet
1 tablespoon olive oil
1 pound (450g) chicken breakfast sausage patties or links (if links, cut into ¼-inch rounds)
1 large sweet potato, peeled and diced
1 large apple, cored and diced
1 small white onion, diced
2 garlic cloves, minced
1 teaspoon fresh thyme
1 tablespoon maple syrup
Salt and pepper, to taste
4 large eggs
Serving options
Chopped fresh parsley
Chopped green onions
Sprinkle of ground cinnamon
Directions For Apple, Sweet Potato And Sausage Breakfast Skillet
- Heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 8 to 10 minutes. Remove the cooked sausage from the skillet and set aside.
- In the same skillet, add the diced sweet potato and additional olive oil, if needed. Cook for 5 to 7 minutes, stirring occasionally, until the sweet potato begins to soften.
- 3Add the apple, onion, garlic, thyme, and maple syrup to the skillet. Season with salt and pepper to taste. Cook for another 5 minutes or until the sweet potatoes and apples are tender.
- Return the cooked sausage to the skillet and stir to combine with the sweet potatoes, apples, and onion. Cook for an additional 2 to 3 minutes to heat everything through.
- Use a spoon to make four wells or indentations in the skillet mixture large enough to hold an egg, about 3 inches (7.5cm) each. Crack one egg into each well.
- Cover the skillet and cook for 5 to 7 minutes or until the egg whites are set. If you prefer runny yolks, cook them longer until the desired doneness is reached.
- Once the eggs are cooked, if you would like, garnish the breakfast skillet with chopped fresh parsley, green onions, and cinnamon before serving immediately from the skillet.
