Stuffed with classic pizza fillings and baked until golden, these easy calzones are just as good for dinner as they are tucked into tomorrow’s lunchbox.

Pizza night, but make it portable. These cheesy calzones are surprisingly easy to pull together with prepared pizza dough and can be customized with whatever fillings your family loves. Better yet, they’re great for making ahead, so bake a batch for dinner and save the extras for school lunches.

Ingredients for Easy Calzones

2 lb pizza dough
1 cup pizza sauce, plus more for serving if desired
1 cup sliced pepperoni
1/2 cup sliced salami
2 cups shredded mozzarella
1 cup ricotta
2 tbsp olive or canola oil
1/2 cup grated Parmesan

Directions for Easy Calzones

  1. Preheat oven to 475°F. Line baking sheet with parchment paper or lightly grease with oil.
  2. Divide pizza dough into 8 equal pieces. On lightly floured surface, roll each piece into a circle about 1/4-in thick.
  3. Spread pizza sauce over one half of each dough circle, leaving a border around the edge. Top with ricotta, pepperoni, salami and mozzarella, being careful not to overfill.
  4. Fold unfilled half of dough over filling to form a half-moon. Press edges together, then crimp firmly with fingers or fork to seal.
  5. Arrange calzones on prepared baking sheet, leaving space between each. Cut small vent in top of each calzone, brush with oil and sprinkle with Parmesan.
  6. Bake for 15 min, or until puffed and golden brown. Let cool for a few minutes before serving, with extra pizza sauce for dipping if desired.
