Ingredients:
● 2 tbsp (30 mL) butter
● 1 egg
● Pinch of salt and pepper
● 2 bagels, sliced in half
● 2 tbsp (30 mL) water
● 2 pieces, sliced cheddar cheese

Instructions:

  1. Preheat a medium sized skillet over medium heat with butter, swirl to coat the pan.
  2. In a small bowl, whisk the egg with a pinch of salt and pepper
  3. Once butter is hot and melted, place two bagel halves cut side down in the pan, pressing
    lightly to flatten the surface against the pan for 30-45 seconds.
  4. Pour the whisked egg into the center hole of each bagel half.
  5. Add the water around the outer edges of the pan to create steam, then cover with a lid
    and cook for about 2 minutes, or until the egg begins to set.
  6. Flip the bagel halves over. Add cheese, then top with the remaining bagel halves to
    create a sandwich.
  7. Place a sandwich press or a heavy bottomed pan on top of the bagel halves to apply
    some weight and cook until golden brown, about 1-2 minutes per side.
  8. Remove from the pan, let cool slightly, and enjoy!
