Green Eggs and Ham Pinwheels  

Serves 2 

Ingredients  

  • 4 large eggs 
  • 1 cup (250 mL) packed spinach leaves  
  • 2 tsp (10 mL) canola oil  
  • 4 slices of deli ham  
  • 4 slices of provolone cheese (or any other cheese)  
  • Pinch of salt   

Instructions 

  1. Add eggs, spinach, salt and pepper to a blender. Blend until smooth.  
  2. Add oil to a 9 inch non-stick skillet over medium heat. Once the oil is hot, pour half of the egg mixture into the skillet and allow to cook for 2 minutes once the edges start to set 
  3.  Lay 2 the ham slices side-by-side on the side of the pan closest to you, then lay 2 cheese slices side-by-side, above the ham, gently swirl the pan to spread the residual egg mixture around the pan so it sets. When the top looks almost set and the cheese is starting to melt, using a spatula, slide the omelette onto a large cutting board. 
  4.  Let cool for a couple of minutes and then roll it up, starting with the ham side (if you roll the cheese side first, the ham will slide out as you roll). Keep rolling until it’s seam side down. Allow to cool for another minute or two and use a sharp knife to gently cut into 2-inch-wide pinwheels. Repeat with remaining ingredients.  
  5.  Serve cut side up on a plate and enjoy your green eggs and ham pinwheels!
