Cake pops might seem complicated but that couldn't be further from the truth. Boxed mix, storebought frosting and sprinkles do the heavy lifting. Keep reading for the (simple!) instructions.
Bite-sized cake on a stick will always be a party favourite; they’re easy to make from scratch, and a boxed cake mix or store-bought pound cake is perfectly acceptable. (TIP: If you really want to streamline things, start with a box of doughnut holes, skewer them with lollipop sticks and simply dip in chocolate melts or butterscotch chips to coat.)
Ingredients
1 layer or pound cake
1/2-1 cup (125-250 mL) frosting, any kind
2-3 cups (500-750 mL) chocolate candy melts or butterscotch chips
sprinkles, for decorating
Directions
Crumble the cake finely into a large bowl. Add the frosting and stir until well blended – there should be no lumps of cake. Roll the mixture into 1 1/2 –inch balls and place on a parchment-lined sheet; refrigerate for half an hour, or until firm. Skewer each ball with a lollipop stick.
In a microwave-safe bowl, melt the candy melts or butterscotch chips, stirring often until melted and smooth. Dip each pop, swirling to coat it completely, then sprinkle with sprinkles. Hold upright, stick in a piece of Styrofoam or set in a small juice cup to let cool until set. Repeat with the remaining cake and candy melts.
Makes about 1 1/2 dozen cake pops.
