Why bother with a sandwich, when you can pack it all into a muffin?

Ingredients

2 cups (500 ml) all-purpose flour
2 tbsp (30 ml) sugar
2 tsp (10 ml) baking powder
1/4 tsp (1 mL) salt
1 1/2 cups (375 ml) grated old cheddar cheese
1/2 cup (125 ml) chopped ham or crumbled bacon
1 cup (250 ml) plain yogurt
2 large eggs
1/4 cup (60 ml) canola or other mild vegetable oil

Directions

Preheat the oven to 375°F.

In a large bowl, combine the flour, sugar, baking powder and salt. Add the grated cheddar and ham and toss to combine.

In a smaller bowl, whisk together the yogurt, eggs and oil. Add to the dry ingredients and stir just until combined. Fill paper-lined muffin cups and bake for 20-25 minutes, until golden and springy to the touch. Tip the muffins in their tins to help steam escape as they cool.

Makes 1 dozen muffins.

PER MUFFIN: 215 calories, 10.6 g fat (4 saturated fat, 4.8 g monounsaturated fat, 1.8 g polyunsaturated fat), 50mg cholesterol, 19.6 g carbohydrate, 9 g protein, 0.5 g fibre.
