This recipe is vibrant and tasty. The whole family can roll up their sleeves and get to work on the prep. Parents of picky eaters, take note: Giving your little one the option to dress their own bowl may open them up to trying something new.
For the fish:
2 garlic cloves, minced
Juice of ½ lime (1 tablespoon)
1 tablespoon avocado oil
¼ teaspoon salt
¼ teaspoon chipotle chile powder
4 (6-ounce) cod fillets
For the pico de gallo:
1 cup diced mango (from 1 ripe mango)
½ cup diced onion
1 jalapeño pepper, minced
¼ cup fresh cilantro leaves, finely chopped
Juice of 1 lime (2 tablespoons)
¼ teaspoon sea salt
For the mayo:
3 tablespoons mayonnaise or veganaise
1 tablespoon sriracha
Juice of ½ lime (1tablespoon)
½ teaspoon honey
¼ teaspoon ground cumin
For the salad:
2 cups shredded iceberg lettuce
2 cups shredded romaine
1 cup thinly sliced green cabbage
Optional toppings:
1 cup crushed tortilla chips
2 watermelon radishes, thinly sliced
1 avocado, sliced
⅓ cup chopped fresh cilantro
Directions:
Preheat the broiler and line a baking sheet with parchment paper.
Make the fish. In a small bowl, combine the garlic, lime juice, avocado oil, salt, and chipotle powder. Add the fish and evenly coat with the garlic mixture. Place the fish on the baking sheet and broil for 10 minutes, until opaque and flakey. Let the fish cool for 5 to 10 minutes, then break up into bite-sized pieces using a fork.
Meanwhile, make the pico de gallo. In a small bowl, combine the mango, onion, jalapeño, cilantro, lime juice, and salt.
Make the mayo. In a small bowl, whisk together the mayonnaise, sriracha, lime juice, honey, and cumin until a smooth, creamy sauce forms.
Divide the lettuce and cabbage among 4 bowls and top each with some chunks of cod. Drizzle with the mayo and top with the pico de gallo. Sprinkle on the tortilla chips, radishes, avocado, and cilantro, if desired.
