Ingredients:
● 2 whole wheat English muffins, cut in half
● 1 tsp (5 mL) butter
● 2 tbsp (30 mL) red onion, diced
● 2 tbsp (30 mL) bell pepper, diced
● 2 eggs, whisked
● ¼ cup (60 mL) pizza sauce
● 4 deli slices of ham
● ¼ cup (60 mL) cheddar cheese, grated
Instructions:
- Preheat oven to 375°F (190°C). Place the English muffin halves on a baking sheet.
- Heat butter in a small non-stick skillet over medium heat. Add the diced onion and bell
pepper, and sauté for 2–3 minutes, until softened. - Pour the eggs into the onion and pepper and scramble until just set. Remove from heat.
- Assemble the Pizza English Muffin:
○ Spread 1 tbsp of pizza sauce on each English muffin half.
○ Layer the sliced ham on top of the sauce.
○ Spoon the scrambled egg mixture evenly over the ham.
○ Sprinkle 1 tbsp cheese on top of each - Place the assembled English muffins in the oven and bake for about 6-8 minutes, or until
the cheese is melted and bubbly. - Remove from oven and let cool slightly before serving.
