When the heat is on, is there a more appropriate drink than lemonade, or more refreshing snack than watermelon? Combine the two for something that tastes like summer in a glass. Watermelon's high water content makes it perfect for whizzing into smoothies or daquiris – or blending with lemon juice, raspberries and sugar for the most sunshiney drink imaginable. Bonus: you get the goodness of real fruit, without the artificial colours and preservatives of powdered drinks and sodas.
Watermelon Lemonade
6 cups cubed seedless watermelon
1/4 cup raspberries
1 cup water
1/3 cup sugar
1/2 cup freshly squeezed lemon juice
Place the watermelon, raspberries and water in a blender. Cover and blend until smooth. Strain through a fine mesh strainer into pitcher.
Add sugar to lemon juice in a separate container and stir till sugar dissolves. Add lemon juice and sugar mixture to watermelon mixture in pitcher and stir. Refrigerate until chilled.
Serves 4.
