Crisp, golden popovers are easier to make than you might think – perfect to serve alongside soup, salad, stew or chili. They freeze well, and are great for popping into lunchboxes.
Ingredients:
2 cups (500 ml) milk, warmed
4 large eggs
2 cups (500 ml) all-purpose flour
1/2 tsp (2 ml) salt
1 cup (250 ml) grated aged Gouda, cheddar, Oka, or other flavourful cheese
Directions:
1. Preheat the oven to 375˚F with a 12-cup muffin pan inside. In a medium bowl, whisk together the milk, eggs, flour and salt – don’t worry about the lumps.
2. Remove the pan from the oven and work quickly so that it doesn’t cool down. Spray the pan with nonstick spray, then fill each cup about 3/4 full with batter.
3. Sprinkle each with about a tablespoon of cheese and return to the oven for 30 minutes, until puffed and golden.
4. Poke the side of each popover with a bamboo skewer to allow steam to escape. Repeat with remaining batter and serve warm.
Makes 1 1/2 dozen popovers.
